Need a stuffing recipe
Hiya,
My brother in law made an awesome stuffing one year with dried cranberries and he can't find it. Does anyone have an awesome stuffing recipe using dried cranberries to share?

Well, this comes darn close. It calls for currants or raisins, but I am sure it would taste just as wonderful with cranberries. Good luck!
1 large onion, chopped
1 large tart apple, chopped (I use Granny Smith)
1/4 cup chicken broth
6 cups toasted fresh bread crumbs (or stuffing mix-plain)
1/2 cup currants or chopped raisins (or in your case cranberries)
1/4 cup slivered almonds, toasted
1/4 cup minced parsley
1 teaspoon dried sage leaves
1/4 teaspoon each salt and black pepper
1/3 cup chicken broth
1. In small saucepan, combine the onion, apple and 1/4 cup of broth. Bring to a boil. Lower heat and simmer for 5 minutes or until onion and apple are tender.
2. In large mixing bowl, combine onion mixture, bread crumbs, currants/raisins/cranberries, almonds, parsley, sage, salt and pepper. Toss 1/3 cup broth with bread crumb mixture.
3. Stuff your bird with this mixture and cook thoroughly until the thermometer registers at least 180 degrees internally.
